Salami is a sausage that first came from Italy. The name comes from the Italian word salare meaning to make something salty. Salami are cured, fermented, and air-dried sausages. Most commonly made with beef, pork and pork blends. Common varieties are combined with spices like garlic, pepper and wine. The most famous varieties of salami are pepperoni, chorizo, and soppressata. Wine and cheese are the go-to accompaniments to serve with salami.
The Salami Appreciation Society organized the National Salami Day, and it was first celebrated in the year 2006 in Henrico and Virginia. The exact history and origin of salami are not known, there is proof that fermented sausage, was being made for about 2,000 years in the Mediterranean region. The Romans and Greeks cured their meat so that they can store the final product at room temperature for about ten years without getting spoiled.
The salami also has many health benefits. Salami has a good amount of Thiamin (B1) and Vitamin B12. Vitamin B12 helps keep cells healthy and makes DNA and Thiamin helps prevent complications in the nervous system and helps the body convert carbs into energy. It is full of good fats, so KETO users, some salami has the perfect balance of protein and fat and has very low carbs.
Did you know our salami is fermented? Before it goes into a dry box, it spends a short time fermenting. During this time microorganisms and good bacteria form that promote digestive health. These bacteria and microorganisms help predigest certain food compounds thus making them easier for your gut to process and for the nutrients to be absorbed. Basically, the final product has lactic acid bacteria which helps to maintain a good digestive system.
(Of course all this health information comes from the actual salami producers…) Too much salami of course is a bad thing… RIGHT?
When you open up one of our salamis from the packaging, you will immediately notice a white mold coated outside the salami. Don’t worry; it’s supposed to be there! It is a penicillin-based mold similar to the white mold you will find on a fine cheese like a French Brie or Camembert. It’s a natural part of the fermentation process of producing artisanal salumi, and the salami mold has its own flavor and flora. The mold protects the salami from bad mold and bacteria. The mold is not dangerous to eat. Most people prefer to remove the casing. You do not need to worry about touching or removing too much mold when you’re handling the salami. Feel free to get a good grip on the salami when cutting it. The mold will not hurt you if you touch your face or put your finger in your mouth after holding the salami.

How the salami is handled is also up to your Sir/Madam. You maybe tied up or down or cuffed. Your Dominant partner may give you permissions to touch!
